Monday to Friday, the cafeteria is the heart of our house. Walking down the pine stairs at lunch, you hear conversations and the sound of cutlery against clean plates. At the center of it all is Frederik Færge Laursen, the Head Chef at Rains HQ. Every day, Fred and his team of four concoct fresh juices, salads, breads, cakes and dishes inspired by everywhere. Here, he shares some of his favorites as we move into Autumn.

“I try to bring new experiences to people as much as I can. I play around with recipes because food to me has always been about feeling, not formula.”

Experimentation is Fred’s main influence when cooking, but it’s not his only one. You’ll see hallmarks of Danish cuisine—described in his words as: “honesty, simplicity, and carbs”—running through all these recipes. Rains at CPHFW—the HOME AWAY launch.

After 5 years, Rains returned to Copenhagen Fashion Week. Not for fashion, but for food. Or, more specifically, to launch our kitchenware collection. Matcha tiramisu and other delicacies were served on our industrial-inspired designs, while a cloud-like structure floated overhead. Explore the space, and installation, below.
